The Pleasure of Company

Food serves as a portal, transporting us to memories long past.
In the subtle aroma of a street kebab, I find myself back to my first time having one.
The food may have faded from memory, but the pleasure of the company stayed with me.
My desire is to create meals that may invoke simple memories such as these; memories that take us back to a common joy.
For are we not, "each of us a mixture; a fusion we achieve of all those we have met"?

Cheesy Last Supper

As the name implies, this soup is not only the appetizer for your meal, but the appetizer for your last meal. The scent of cheese and bread linger in the air, a premonition for both death and dinner.
To me, they symbolize an inescapable comfort - these ingredients have been with me since childhood, providing solace in every incarnation. A meal that has seen me through my toughest days, a meal that may one day see me through my last.

Ingredients

  • 250ml milk
  • 50g butter
  • 1 onion
  • 2 cloves garlic
  • 100g strong cheddar cheese
  • 50g stilton cheese
  • 100g bread

Instructions

  1. Sweat the onion and garlic in butter.
  2. Add 100ml milk and the bread, leave to simmer for 10m.
  3. Blend the mixture, add the remaining milk and both cheeses.
  4. Reheat until melted and serve, with any bread on the side.

Frikadeller - the meatball of the masses

Frikadeller, the humble meatball, transcend their simplicity. In their spherical form, they symbolize the cycle of life: ground into formlessness, pressed into shape, and finally consumed, only to return again.

Ingredients

  • 500g minced pork
  • 1 small onion, diced
  • 1 egg
  • 3 tbsp flour
  • 100ml milk
  • Salt & pepper to taste

Instructions

  1. Mix all ingredients together in a bowl.
  2. Form into small balls and fry in a pan until cooked through and golden brown.

Miso Caramel Pudding

A bit of an unorthodox dessert. The addition of miso to the caramel makes it shine in an unexpected way - the mix of salty and sweet meld into one, and transform into something much more. A fitting end to a meal dedicated to the pleasure of company - the combination of flavors serve an additional reminder that sea and land were never meant to be separated.

Ingredients

  • 2 tablespoons miso paste
  • 200ml heavy cream
  • 100g sugar
  • 2 eggs
  • 1 tbsp honey
  • Butter for greasing

Instructions

  1. Preheat oven to 160C and grease ramekins with butter.
  2. Make the caramel: heat sugar in a pan until amber, then add the miso paste and stir well. Add the cream and simmer until combined.
  3. In a bowl, whisk eggs and honey. Gradually add the caramel mixture while whisking continuously.
  4. Pour into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
  5. Bake for 30-35 minutes or until set. Let cool before serving.
